Caprese Salad with balsamic reduction
1/2 cup of Trusted Freshness® Genovese basil
2 large tomatoes, cut into 1/2-inch slices
1 package of fresh mozzarella cheese, cut into 1/4-inch slices
1/4 cup Extra virgin olive oil
1 cup balsamic vinegar
1/2 cup honey
Salt and Pepper to taste
1. Stir balsamic vinegar and honey together in a small saucepan and place over medium to high heat. Bring to a boil, reduce heat to low and simmer until the mixture has reduced to approximately 1/3 cup or about 10 minutes. Set aside to cool.
2. Arrange alternating slices of tomato and mozzarella cheese on a serving platter
3. Spread the basil out on top of the salad (or in between slices if they are larger leaves)
4. Salt & pepper to taste
5. Drizzle the EVOO and balsamic reduction over the top.
